Seattle has an abundance of tasty doughnuts shops. The Dahlia Bakery is known for doughnuts that come with a variety of dipping sauces. Top Pot was started here. At Pike Place Market you can get a dozen mini doughnuts hot out of the fryer at Daily Dozen. Plus there’s Mighty O, and several other shops around.
I mean, if you want a good doughnut to go with your coffee, you have your options. That is, unless you have food allergies or intolerances, which, sadly is where I find myself. I was recently reminded of this doughnut profusion (and my own doughnut dilemma) at a baby shower, and the thought sort of stuck there in my mind like an overly glazed buttermilk bar stuck to a cookie sheet in a bakery display case.

I was dreaming about fluffy sweet bundles of dough for weeks. Finally, I decided I had to do something about it. After searching and searching for recipes I found a few, but nothing that fully suited my needs, so I combined the basic ideas to make baked, doughnut holes that are free of gluten, yeast and egg.
They are so tasty -- and healthy, as far as doughnuts go -- that I had just had to share. I assure you, even if no one in your family has food intolerances, you’ll enjoy these tasty treats.
