Fresh Flavors
Now, as summer comes rolling into Seattle, I've been dreaming of those fresh flavors. With temperatures finally starting rise, ceviche is the perfect addition to any summer menu. It's citrus-marinated (which actually cooks the fish) so there's no need to heat up the oven or fire up the grill. Plus, with the abundance of fresh fish and shellfish available in Seattle, it's the perfect place to experiment with flavors and ingredients. That's just what I did.
Tradition with a Twist
I started with the basics: seafood (shrimp), citrus juice and tomatoes, then added a few of my favorite Latin flavors: cilantro, avocado, jalapeño and green onions. The result was a fresh, flavorful dish that tastes like summer. Go ahead, whip up a batch and enjoy...no cooking required.
