Maybe summer's already hit where you live. If that's the case, that must be nice for you. Here in Southern Oregon, April showers dug in their heels and never really left, and it's still a bit chilly some days. Chilly enough to send some of us hunting for some comfort food that might be more traditionally suited to winter. But I say, if the heat still needs to be on and the woolly socks haven't been put away, eating macaroni and cheese is fair game, too.

The Kraft boxed stuff has its place (mostly among preschoolers and first-year college kids whose repertoires include PB & J, grilled cheese and cold cereal), but this recipe (adapted from a vintage BHG cookbook by my mother-in-law) hits the spot for a slightly more advanced palate, and fends off the chill this obnoxious weather brings.
