Since moving to Southern Oregon from The Bay area, Chef Douglas Todd of Wine Country Catering has been masterfully stimulating the culinary consciousness of many food lovers lucky enough to attend one of his winemaker dinners, cooking classes, or events catered by him and his team. His passion is evident in his demeanor and skill as he artfully prepares his creations, and having him in your kitchen is a delight, not only for his creative dishes, but for his pleasant, engaging company as well.
Chef Todd has been catering since 1995 with local restaurants and opened Wine Country Catering three years ago. Not only does he offer superb catering services, he also does winemakers dinners, food and wine pairing demonstrations, and you can even turn one of his theme “Taste of the World” dinners into a cooking class for you and your friends. These exotic themed menus feature traditional cuisine from Italy, Hawaii, Spain, France, Cuba, Japan, or Southern Barbeque and Tex-Mex, to name just a few.

His event platters are equally appetizing, with a broad range of choices, from delicious, healthy snacks such as a Fresh Fruit platter with Crème Anglaise dipping sauce and Seasonal Grilled Vegetables with Sundried Tomato Vinaigrette Glaze, to Maryland Style Crab Cakes and Assorted Sushi plates. There are many sample dinner and appetizer menus to chose from on his website, and all can be customized to fit the needs and tastes of event-goers.
On a recent, beautiful Sunday evening, The Local Dish spent some time with Chef Todd as he prepared for a small event that featured a Spanish/Cuban theme. The specially customized menu had Todd making Paella—a traditional Spanish dish made up of saffron rice simmered with chorizo, pork sausage, chicken, shrimp, and mussels—and Cuban Mojo Roasted Pork, with achiote sauce, and mango and avocado salsa served on a bed of dirty rice with lemons and oranges. Appetizers included Tortilla Espanola, Cuban Shrimp in Tomato Sauce, Serrano ham with Spanish Cheeses, and Avocado and Pineapple Salad tossed with mint and chili oil. This delicious evening was topped off with a luscious Cuban Rum Cake, which Todd promised was so amazing it would change people’s lives, and by all accounts, he wasn’t lying!
