Ingredients
Olive oil
1-2 tablespoons of butter
1 yellow squash
1 small white onion
1-3 garlic cloves, minced or sliced (optional)
Salt and cracked black pepper (to taste)
Directions
Wash and slice the squash into 1/8-inch slices (approximately -- don't break out the tape measure). Slice the onion about the same thickness as the squash. Heat the butter and olive oil in a pan on low heat. Once the butter's melted, add the squash and onion. Cover and cook over medium-low heat until soft, 15 to 20 minutes depending on the thickness of the squash slices and the heat. Stir every few minutes. Add the garlic about halfway through the cook time. I like my squash softer. If you like yours a little stiffer, take it out sooner.
Once it's cooked to your taste, drain off a little of the liquid in the pan. Sprinkle with salt and pepper, and serve.
