Serves 4.
| Good for a lot more than Fig Newtons. |
Ingredients
8 fresh ripe figs
4 oz. Rogue Creamery Crater Lake Blue Cheese
1 package of good-quality proscuitto - very thinly sliced
olive oil
1/4 cup Jacksonville Mercantile Barrel Aged Balsamic
Black Truffle oil (optional) for garnish
Directions
Slice the figs down the center, but not through, to create an "X".
Stuff a small piece of blue cheese into the fig and close back up.
Wrap the fig with a slice of proscuitto.
Drizzle a small amount of olive oil over the proscuitto-wrapped fig.
Bake figs in a 350F degree oven for 10 minutes.
Serve warm with balsamic vinegar drizzled over the top of figs with truffle oil if desired.
