Grape Flour Fried Chicken
Recipe created using products from The Whole Grape
Ingredients
4 skinless, boneless chicken breasts, halved
1 cup Panko breadcrumbs
2/3 cup The Whole Grape Grape Flour
Pinch of dried, or 1 tablespoon fresh oregano
1 egg, beaten
Directions
Mix Panko breadcrumbs with salt, pepper, oregano and half the grape flour in separate dish. Place remaining grape flour and egg in separate dishes. Season chicken breasts on both sides with grape flour first, then dip in egg, then in Panko/grape flour mixture. Fry in oil 2 inches deep in medium sized pan on medium heat. Cut into strips and top with mozerella and tomato slices, drizzle with balsamic vinegar reduction, and garnish with Thai basil and rosemary.
