Frushi is a truly wonderful thing. It can easily be explained as fruit sushi, but it is so much more. This is a dessert that allows you to turn the creative kitchen wheels, inventing new slicing techniques and showcasing your favorite fruits. It can easily make you look like a master of food artistry, impressing your friends and scoring points with your family. It’s a healthy dessert that can be adapted for breakfast or brunch.
Ingredients
1 cup short grain sweet rice or sushi rice
2 cups water
12 ounces coconut milk
Sugar to taste
Fresh strawberries, halved
Fresh blackberries, de-segmented
Honeydew melon, cut into thin 6-inch long strips
Cantaloupe, cut into thin 6-inch long strips
Whole fresh blueberries
Pear, cut into thin strips
Mango, cut into thin strips
Directions
Bring water and rice to a boil in medium saucepan. Cover, reduce heat and simmer until water is absorbed. Immediately place in large bowl to cool uncovered for about 20 minutes. Reduce coconut milk by half on low heat, adding sugar to taste. Stir coconut milk into the rice until combined well. Form rice into small rectangle shapes, and place strawberries, pear, and mango on top. Take melon strips and form into circles, placing small spoonful of rice in the center. Top with blackberries or blueberries.
