Spice up that boring potato side dish with an unexpected flavor profile: apples! Your dinner companions will be pleasantly surprised and asking for seconds.
Apple Scalloped Potatoes

Serves 6
Ingredients
2 cups Thompson Creek Organic Granny Smith apples
2 cups raw potatoes, sliced thin
2 tablespoons flour
1 teaspoon salt
Dash of pepper
3 tablespoons butter or margarine
2 cups milk, scalded
1 1/2 cups sharp Cheddar cheese
Directions
Layer one third apples and potatoes in a buttered 2 or 3 quart baking dish. Combine flour, salt and pepper in a cup. Sprinkle half over the potatoes and apples. Repeat layers ending with potato slices on top. Dot with butter or margarine. Pour scalded milk over potatoes and cover.
Bake 45 minutes at 375°. Uncover and sprinkle cheese evenly over top.
Bake uncovered 15 minutes longer or until apples and potatoes are tender and cheese is melted.
