From garden to table: The sweet shaved melon contrasts with the saltiness of the prosciutto and cheeses, and the spicy nuttiness of the arugula refeshingly finishes the flavors.
Shaved Melon and Prosciutto Pizza
Ingredients
1 package of pizza dough (Try Trader Joe's)
1 ripe cantaloupe, halved, seeded, and rind removed
3 tablespoons extra-virgin olive oil
½ cup asiago, parmesan, and romano cheese blend, shredded
5 strips prosciutto
1 cup arugula
Directions
Follow directions on pizza dough package to prep dough for toppings. Preheat oven to 500°. Assemble pizza. Brush on 2 tablespoons of olive oil and sprinkle with cheese. Transfer to baking tray or pizza stone. Bake for 5 minutes. Begin shaving cantaloupe with a vegetable peeler, mandoline, sharp knife, or even cheese slicer.
Take out the pizza and lay down prosciutto strips. Bake again for another 3-5 minutes, until golden brown. Quickly top pizzas with cantaloupe shavings. The heat will bring out the juices. Dress with arugula and remaining olive oil. Serve, and enjoy!
