It makes use of the abundant end-of-season local ingredients (lettuce, spinach, carrots, green onions and cucumbers are all in season right now) and is packed full of nourishing veggies – six different ones. Count them...six. So, not only is it delicious, it's nutritious. Chopping and dicing aside, it's a snap to make as the perfect ending to a warm late summer day.
