Ingredients
6 ounces spinach, washed stems removed
1/2 cup fresh blueberries, washed
2 apricots, washed and roughly chopped
1 chicken breast, chopped and sautéed with garlic, white wine, salt and pepper
3 tablespoons walnuts, chopped
Directions
Chop 1 fresh chicken breast and sauté with 1 garlic glove, 1/4 cup of white wine and salt and pepper to taste, set aside. Place spinach in a bowl and top with warm chicken. Add in blueberries, apricots and walnuts. Dress with feta yogurt dressing, or a sprinkling of feta cheese and your favorite vinaigrette.Feta yogurt dressing
Ingredients
1/3 cup feta cheese crumbled (Appel farms is local)
1/4 cup plan yogurt (Greek Gods is local, but a bit thick so you may want to add a splash of milk)
1 clove garlic, minced
1 tablespoon fresh lemon juice
Freshly ground black pepper
Directions
Mix feta, yogurt, lemon juice, garlic and pepper in a medium bowl until whisk until combined.
Dressing comes from this salad recipe.
