Seattle Recipes
This salmon quiche is technically a Seattle dish that can be made with ingredients found within 20 miles of Seattle, but you can make it anywhere salmon's available. Good for breakfast, lunch or dinner, quiche is a fabulous blank canvas for culinarily artistic expression.

Ingredients
7 eggs
1/2 large onion
2 tbsp Greek yogurt
15 ounces spinach
2 cups smoked salmon
Salt and pepper
6 ounces cheese
2 teaspoons baby dill
Directions
Grease an oven-safe skillet. Sprinkle cornmeal on the bottom of the pan to form a thin crust. In a separate dish, beat eggs with Greek yogurt, (this recipe uses Zoi yogurt from Auburn, WA, but any Greek yogurt will do). Add chopped onion, steamed spinach, the smoked salmon and the cheese. To season, add salt and pepper and baby dill. Pour the egg mixture into the pan and bake it for 40 minutes at 350 degrees, or until you can stick a knife in it and it comes out clean.
