Ingredients
1 pound mascarpone cheese
3 tablespoons Dark Rum
1 teaspoon vanilla
¼ cup sugar
1 cup heavy whipping cream
24 Italian ladyfingers
1¼ cup espresso, cooled (we recommend Caffé Vita)
¼ cup 100% cocoa powder
2 tablespoons shaved Theo Chocolate for topping
Directions
In a large bowl combine sugar, vanilla, and mascarpone. In a separate bowl, whip cream until peaks form. Gently fold the whipped cream into the rum and mascarpone mixture, set aside. Combine the espresso and the rum.Dip one ladyfinger into the espresso/rum mixture to saturate. Lay it in the bottom of an 8 x 8 dish (glass shows off the layers beautifully). Repeat with 11 more ladyfingers, filling the bottom of the dish with half of the ladyfingers. Spread half of the cream and mascarpone mixture over the ladyfingers. Sprinkle 2 tablespoons cocoa powder on top of the creamy mixture.
Repeat layers using remaining ingredients. If there is extra espresso/rum mixture, pour it over the second layer of ladyfingers before putting on the second creamy layer. Top with 2 tablespoons shaved Theo Chocolate, then cover and refrigerate overnight to set.
Serve with espresso and let this amazing coffee dessert melt in your mouth!| Next > |
