Incredible Egg Sandwich
(makes 2 sandwiches)

Ingredients:
2 Eggs
2 good size chunks of French bread (or English muffins)
1 small box Oyster mushrooms
¼ Red or sweet onion
4-6 Fresh basil leaves
Crumbled feta cheese (to taste)
(You can make endless improvisations to this recipe based on what you have on hand)
Directions:
Remove bottom ¼” from mushroom bouquet. Chop caps and stem into ¼” cubes. Julienne onion and basil leaves. Heat a splash of olive oil with 1 Tbs unsalted butter. Sauté onions with a pinch of salt on medium-high heat until they turn a nice caramel-brown color. Add the oyster mushrooms and sauté until browned and fully cooked. Turn off heat and add basil leaves to wilt. In the meantime, toast your French bread or English muffins and cook your eggs as you prefer (we prefer over-medium with a soft yolk!) Assemble sandwich and top with crumbled feta.
