Salmon with Cilantro Pesto
(This can be used in other recipes as well)
1 bunch cilantro, washed & stems trimmed
2 cloves garlic
1 tablespoon lemon juice, freshly squeezed
3 tablespoons olive oil
1 tablespoon walnuts, chopped
1 tablespoon sunflower seeds
1 tablespoon water
1/4 cup Parmesan cheese
Directions
Preheat oven to 375 degrees.
Put all the ingredients for the pesto into a blender or food processor and blend until smooth.

Place two pounds of salmon, skin side down, into a baking dish (lining the dish with foil makes clean-up a snap). Pour cilantro pesto over salmon, in a good thick layer. Place salmon with the pesto on it into the oven and bake until desired doneness (about 10 minutes per inch of thickness for individual fillets. Fish is done when it looks opaque and flakes when cut with a fork.) Serve with your choice of sides and dive in!
