Rhubarb stands alone in this simple syrup recipe. Drizzle it on pancakes, pour it over ice cream, or add it to your favorite cocktail recipe for an unusual treat.

Ingredients
1 1/4 cups rhubarb, peeled and thinly sliced
3/4 cup sugar
1/2 cup water
Directions
Combine all ingredients in a heavy saucepan. Bring to a boil over medium-heat; reduce heat to low, and simmer until rhubarb breaks down and becomes very mushy, about 10 minutes. Pour mixture through a strainer lined with cheesecloth; the mixture may drain slowly, so rest the strainer on the lip of a bowl. Cool and store in the refrigerator; makes about one cup of syrup.
