GRILLED CHICKEN WITH CITRA BLONDE BASIL BBQ SAUCE
Recipe courtesy of Widmer Brothers Brewing and Chef Sean Temple
This tangy, golden-colored barbecue sauce features Widmer Citra Blonde Summer Ale and is a perfect complement to grilled and roasted chicken. Makes about 1-1/4 cups sauce.
Ingredients
3/4 cup cider vinegar
3/4 cup yellow mustard
1/2 cup sugar
1/3 cup Widmer Brothers Citra Blonde Summer Ale
1/4 cup brown sugar
1 teaspoon black pepper
1 teaspoon white pepper
1/2 teaspoon soy sauce
1/2 teaspoon Worcestershire sauce
1/2 red Thai chili* (seeded), fresh if possible but dry is ok
10 - 12 basil leaves
2 tablespoons butter
Directions
Combine all of the ingredients in a pot except for Thai chili, basil and butter, and simmer for approx 30 minutes. Remove from heat and stir in butter until incorporated, then add Thai chili and basil. Place a cover on pot and let flavors steep for 20 minutes. Uncover and strain, adding salt to desired taste. Use this sauce as you would on grilled or roasted chicken.
Note: If you can't find a red Thai chili, substitute a few dashes of cayenne pepper for desired spiciness.
